Preheat your oven to 400°F (200°C). Roll out the puff pastry and cut it into 18 circles using a round cutter.
Place the circles on a parchment-lined baking sheet.
In a skillet, heat the olive oil over medium heat. Add the shallots and cook until they start to caramelize, about 5 minutes.
Add the mushrooms and cook until they are tender and any liquid has evaporated.
Drizzle balsamic vinegar and cook until absorbed
Season with salt and pepper.
In a bowl, mix the herbed goat cheese and heavy cream until smooth and creamy.
Top pastry circles with the mushroom and shallot mixture.
Brush the edges of the pastry with the beaten egg.
Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and puffed.
Remove from the oven and add a dollop of goat cheese to each.
