- 1 tsp olive oil extra virgin
- 1 lb. fresh baby spinach
- 2 cups cottage cheese
- 3 eggs
- 3 tbsp melted butter
- 1 cup cheddar cheese (cubed)
- 3 tbsp whole wheat flour
- ½ tsp salt
- pepper to taste
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- Add 1 tsp olive oil in a pan and sautee onion on medium heat for 3-4 minutes until softened. Add spinach and cook an additional 2-3 minutes until wilted.
- In a large bowl, combine all remaining ingredients and then fold in the cooked spinach and onions.
- Pour into greased pie plate and bake 375℉ for 45 minutes to 1 hour (until the pie has a nice brown top).
