Ingredients
  

  • 1 tsp olive oil extra virgin
  • 1 lb. fresh baby spinach
  • 2 cups cottage cheese
  • 3 eggs
  • 3 tbsp melted butter
  • 1 cup cheddar cheese (cubed)
  • 3 tbsp whole wheat flour
  • ½ tsp salt
  • pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions
 

  • Add 1 tsp olive oil in a pan and sautee onion on medium heat for 3-4 minutes until softened. Add spinach and cook an additional 2-3 minutes until wilted.
  • In a large bowl, combine all remaining ingredients and then fold in the cooked spinach and onions.
  • Pour into greased pie plate and bake 375℉ for 45 minutes to 1 hour (until the pie has a nice brown top).
