Ingredients

  • 1 cup rolled oats
  • 1/4 cup pumpkin puree
  • 1/4 cup almond butter (or any nut butter)
  • 1/4 cup honey (or maple syrup)
  • 1/4 cup ground flaxseed
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/2 tsp vanilla extract
  • 1/4 cup mini chocolate chips (optional)
  • 1/4 cup chopped nuts (pecans or walnuts)

Instructions

  • Directions:
  • In a large mixing bowl, combine the rolled oats, pumpkin puree, almond butter, honey or maple syrup, ground flaxseed, cinnamon, nutmeg, ginger, cloves, and vanilla extract. Stir until all ingredients are well combined.
  • Fold in the mini chocolate chips and chopped nuts.
  • Shape into balls: Using a tablespoon or cookie scoop, scoop the mixture and roll into bite-sized balls with your hands. If the mixture is too sticky, chill it in the fridge for 10-15 minutes to make it easier to handle.
  • Chill and store: Place the energy balls in an airtight container and refrigerate for at least 30 minutes to firm up.
  • Store in the fridge for up to 1 week or freeze for up to 1 month.
