Mediterranean Inspired Flatbread

Ingredients
  

  • 1 cup red lentils (soaked)
  • 1/4 cup water
  • 1 tbsp extra-virgin olive oil
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 1/4 tsp garlic powder
  • 1 tbsp sun-dried tomatoes (chopped)

Instructions
 

  • Start by blending the soaked lentils with water until you achieve a smooth consistency.
  • Pour the blended mixture into a bowl and stir in olive oil, salt, dried oregano, garlic powder and sun-dried tomatoes.
  • Heat up a non-stick skillet over medium heat.
  • Spoon small dollops of the batter onto the skillet and gently spread them out into thin circles.
  • Cook each side for about 2-3 minutes, until they’re beautifully golden and cooked through. Serve warm and enjoy every bite!
