  • 2 ripe bananas mashed
  • 1 ½ cups rolled oats
  • 1/4 cup almond butter (or peanut butter)
  • 2 tbsp maple syrup (optional for extra sweetness)
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 cup dark chocolate chips or raisins (optional)

Instructions
 

  • Preheat your oven to 350°F and line a baking sheet with parchment paper, or a silicone mat.
  • In a mixing bowl, mash the bananas until smooth. Stir in almond butter, maple syrup (if using), and vanilla extract.
  • Add rolled oats and cinnamon to the bowl, mixing until well combined.
  • Fold in chocolate chips or raisins if desired.
  • Scoop tablespoons of the mixture onto the prepared baking sheet, flattening slightly.
  • Bake for 12-15 minutes, or until cookies are golden and set. Let cool before serving.
