  • 1 cup almond flour
  • 1 cup rolled oats
  • ¼ cup coconut oil (melted)
  • Zest of 1 lemon
  • ¼ cup maple syrup
  • 2 tbsp fresh lemon juice
  • ½ tsp vanilla extract
  • ¼ tsp baking soda
  • pinch of salt

Instructions
 

  • Preheat your oven to 350°F and line a baking sheet with parchment paper, or a silicone mat.
  • In a mixing bowl, combine almond flour, rolled oats, lemon zest, baking soda, and salt.
  • In a separate bowl, whisk together melted coconut oil, maple syrup, lemon juice, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  • Scoop tablespoons of dough onto the prepared baking sheet, flattening slightly.
  • Bake for 10-12 minutes, or until edges are golden. Allow to cool before serving.
