- 1 cup rolled oats
- ¼ cup coconut oil (melted)

Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper, or a silicone mat.
- In a mixing bowl, combine almond flour, rolled oats, lemon zest, baking soda, and salt.
- In a separate bowl, whisk together melted coconut oil, maple syrup, lemon juice, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Scoop tablespoons of dough onto the prepared baking sheet, flattening slightly.
- Bake for 10-12 minutes, or until edges are golden. Allow to cool before serving.
