These no‑bake chocolate granola bites blend soaked dried fruits, toasted nuts, oats, and honey into a naturally sweet, chewy base, then coat each piece in melted dark chocolate for a rich, wholesome snack ready in just 20 minutes.

Ingredients
  

  • 1/2 cup dates
  • 1/2 cup dried cranberries
  • 1/3 cup oatmeal
  • 1/2 cup almonds
  • 1/4 cup peanuts
  • 2 tbsp pumpkin seeds
  • 1.5 tbsp sesame seeds
  • 1 tbsp honey
  • 5 oz organic dark chocolate
  • 1 tbs olive oil

Instructions
 

  • Start by giving your dried fruits a revitalizing soak in cold water for 15 minutes. This step not only removes preservatives but also activates their beneficial properties.
  • Once soaked, drain the water and blend together the dates, dried cranberries, and oatmeal until you achieve a sticky mixture.
  • Toast the almonds and peanuts separately in a pan until golden brown. Then, chop them finely or grind them in a blender for a more uniform texture. Add the nuts to your base mix and give it a good stir.
  • Add honey to the mixture and ensure it's evenly distributed.
  • Roll the mixture into small spheres and place them on a silicone mold. Gently flatten each ball to your desired thickness. This step sets the foundation for our delicious cookies.
  • Melt the dark chocolate and stir in olive oil. Once melted, carefully dip each cookie into the chocolate mixture, ensuring they're fully coated.
  • Pop your cookies into the refrigerator for 30-40 minutes to allow the chocolate coating to set and the flavors to meld together.
